- 2 cups raw unsalted walnuts
- 1 cup dates (pits removed)
- 1/2 cup raw sesame seeds
- 1 bunch mint
- 3 ripe bananas
- 1/4 cup coconut oil
- 1/3 cup raw unsalted cashews
- 1/2 cup dates (pits removed)
- 1 oz dark chocolate (I used 88% dark)
- 1 t coconut oil
Instructions
1. Pulse together the walnuts, dates, and sesame seeds in food processor with S shaped blade.
2. Once completely blended and crumbly, turn off processor and press the mixture into a pie plate. Set aside.
1. Blend or process all ingredients until completely smooth.
2. Add the blended filling on top of the crust with a spatula. Chill for at least 2 hours before serving.
1. Slowly heat the chocolate and oil in a heatproof bowl. You can either microwave on medium heat for 30 seconds at a time until melted OR use a double boiler. This can be achieved by boiling a small amount of water in the bottom of a small saucepan and holding the non reactive bowl over the heat, stirring the chocolate and oil constantly until melted.
2. Once melted, pour the topping over the pie and let chill.
