Raspberry and Coconut Flapjack
You will need:
1 cup of oats
1 cup of unsweetened rice milk
1 cup of fresh raspberries
1/2 cup of desiccated coconut
1/2 cup of cocoa nibs
1 tsp of vanilla
3 tbsp of melted raw chocolate
Method:
Pre heat your oven to 180c and line your baking tray with baking paper. Combine all of the ingredients together in a small bowl or jug and pour into your lined baking tray. Baked for 30-40 minutes until the lightly golden on top. Lift the flapjack out of the tray and place onto a cooling rack. Meanwhile melt your raw chocolate and drizzle over the flapjack once completely cool.
Note: These are also very delicious warm, so eat it straight out of the oven if you are after a warm gooey treat!
